Brian Polen
Brian Polen has emerged as a leader in the American craft sake movement and was awarded Wine Enthusiast’s 40 Under 40 Award in 2019. Through Brooklyn Kura, Brian challenges sake stereotypes, converting craft beer and wine enthusiasts into sake fans by introducing them to the breadth and complexity of the beverage. Previously, Brian held multiple positions over his ten-year career at American Express, including the Vice President of Marketing & Big Data Platforms and various director roles. He graduated with a Master of Science in Engineering from the University of Michigan and a Bachelor of Arts in Economics from the University of California in Irvine.

Bradnon Doughan
Brandon Doughan has had a lifelong interest in fermentation. From wine to beer to soy sauce, Brandon has been brewing since before he was of legal drinking age, but did not experience high-quality sake until arriving in NYC. The 2013 trip to Japan further piqued his interest in sake and the sake-brewing process. With a background in biochemistry research, Brandon began experimenting with sake recipes and blending his knowledge of Japanese technique with Brooklyn ingredients. The result is Brooklyn Kura, a beverage that is both ancient and modern, Japanese and American.

With respect for the Japanese sake brewing traditions that have evolved over a thousand years, co- founders Brian Polen and Brandon Doughan inspire interest in the ancient beverage with the application of unique American ingredients and a passion for the process. Since launching in 2018, Brooklyn Kura has become the leader of the fast-growing American craft sake movement. In 2021, Brooklyn Kura entered into a strategic partnership with Hakkaisan, one of the most respected sake breweries in Japan. Through this collaboration, Hakkaisan and Brooklyn Kura hope to introduce American consumers to the complexities of sake, and create a community of sake lovers in the US. Focusing on all Jumnai styles, Brooklyn Kura sake is made with four deceptively simple ingredients — American-grown rice, koji, Brooklyn water and yeast. A well-crafted sake can be floral or acidic, sweet or astringent, fruity or savory. The slightest changes in yeast strain, rice variety, water mineral content or brewing method can produce wildly different results, and this is what attracts seasoned brewers to the process.
